Blueberry and Bran Muffins

This is the perfect fruit muffin to bake at home. Loaded with fibre and laced with blueberries or even raspberries, these muffins are delicious and yet healthy enough to suit your children's or your work lunchboxes, your breakfast menu, or essential morning and afternoon teas. Dressed up in a pretty paper wrapper, and dusted with icing sugar over a layer of scented cinnamon, these muffins will impress.

Blueberry and Polenta Muffins

Treat yourself to some delicious and easy to bake Blueberry and Polenta muffins this weekend. You will be so pleased you did. Blueberries are the perfect fruit to add to a muffin batter because of their colour, flavour and size, and even though blueberries aren't grown around here in North Queensland, except for a few native bushes that people might grow, I used frozen ones, and they worked perfectly.

Lemon and Blueberry Yoghurt cake

Lemon and blueberry yoghurt loaf cake can be the sweet and tangy ending to a meal, served warm with yoghurt, blueberries and a drizzle of honey, or served as the sweet component of a morning or afternoon tea with lemon icing or a dusting of icing sugar. It's versatile and delicious.

Quick Blueberry Self Saucing Pudding

Need a quick but delicious pudding for dessert just because you want some comfort food in a hurry on a rainy and windy day, or for just no particular reason?  A self saucing pudding always hits the mark. This post is laced with nostalgia, focusing on a pudding recipe that Mr. HRK passed on to me from his Mum Jessie, a long time ago. All of the ingredients were already in my pantry so that was easy. I added dried blueberries to the batter instead of using currants or sultanas, as that's what I had left over from making my Rustic Blueberry Scones. I always try to keep a couple of packets of dried blueberries on hand as they come in so handy.

Rustic Blueberry and Coconut Scone - International Scone Week 2019 - #ISW2019

I have just been reminded about International Scone Week from Tandy, who writes the wonderful Lavender and Lime blog.  ( Anyone can become part of #ISW, just go to Tandy's blog for information.) So my creative juices started flowing and I remembered this fruity scone recipe I had been wanting to try. Sometimes a wholesome, fruity and delicious scone is just what is required to have with a cuppa, a comforting reminder of a bygone era, except that blueberries weren't as readily available back then as they are now. Most people I know have a favourite scone recipe which they can create at a moment's notice when time is at a premium. Mine is my reliable Damper Scone recipe, very Aussie.

BLUEBERRY, WILD OATS & BANANA MUFFINS

Dear friends, beware, these are super healthy, in fact there is no sugar to be found in them, except of course in the fresh blueberries and bananas, oh and a little in the yoghurt. These are probably the kind of muffins you would find on the menu in a Healthy cafe in trendy Byron Bay (New South Wales) or Cairns (Queensland) but there they would be served with a drizzle of maple syrup or exotic homemade ice cream beside them.

Blueberry and Polenta Muffins and life in the slow lane that they call retirement

Retirement and a satisfying life in the slow lane

As I sit here typing on my computer, it is occurring to me how many other things I have on the go at the same time, and that my brain is processing in the background. Whilst I suppose that my main focus is typing up this recipe and thinking about how delicious these muffins are and when I can justify having another one, I am thinking about the sour dough bread I need to start preparing which I always try to bake on Mondays.

Blueberry pancakes on Pancake Tuesday

Our good friend Paul arrived this morning with delicious blueberry pancakes for Pancake Tuesday, such a treat and a lovely surprise. Apparently Pancake Tuesday is an Anglican tradition, however this
recipe was taken from the old Presbyterian cookbook .  I'm sure I've got a copy somewhere.  There are so many recipe treasures contained in those old church and school cookery books.

Paul said this recipe is just two cups of everything.  What an easy way of remembering a recipe. I'm not great at remembering recipes but this sounds memorable.

Then this afternoon I hosted Mahjong so more cake.

A perfect day really, don't you think?
