Chicken Fricassée with Shallots, Mushrooms and Bacon


This rustic French dish, a classic Chicken Fricassée, is all about fresh chicken thighs seared in butter and braised in white wine with sweet French shallots, mushrooms, and tasty bacon bits. This recipe sounds fancy but it's not. Although it's a French classic, it's very achievable for the home cook, because it's just a comforting single pot recipe, using humble ingredients from your kitchen (although I did make a special trip to the supermarket to buy French shallots). There are many versions of this dish, depending on what the cook has on hand at the time, but I was thrilled with how this particular combination tasted. There is no fancy French sauce, just white wine flavoured with beautiful ingredients.

Ratatouille, a French Vegetable Stew

Ratatouille is a French vegetable stew, originating from Provence in Southern France where it was cooked as a dish for the poor. However now it is cooked because it is delicious. Starting with  beautifully fresh Mediterranean vegetables, it is the perfect dish to cook in advance or even the day before you wish to eat it. However my preference is to cook it with a delicious roast lamb shoulder or leg, and both can be timed perfectly to be completed before friends arrive for dinner. I think ratatouille is perfect for eating outside on a warm Summer's night or served as comfort food on a Winter's evening. It keeps well in the refrigerator for up to five days, and can also be eaten with chicken or fish throughout the week.

Creamy French Chicken Tarragon (Poulet a l'Estragon)

 

I chose to make this Creamy French Chicken Tarragon because it is something of a classic French dish, and as I will be visiting my family in France soon cooking some of their dishes is part of my preparation for the journey. This dish includes chicken thighs cooked in a flavourful creamy tarragon sauce and it's a cinch to make. Cream, butter and white wine are no strangers to a French kitchen. Perhaps though I should be really honing up on some Aussie dishes that I know my son will want me to cook for them and perhaps for any of their visitors as well. That is generally how it works isn't it?

Creamy Celery and Chicken Casserole

 

The delicious aroma of a Chicken Casserole baking slowly in the oven on a cold and wet Winter's day or even a sunny Winter's day,  is so very comforting to me, and  gives the whole family a lot to look forward to for dinner. This is the Queen of comfort food, fall-apart chicken, lovely vegetables, and a seasoned creamy sauce.  Serving up this dish is like giving everyone a huge hug around the dinner table.

French cooking doesn't need to be fancy, it can be quite simple, with the subtle flavours being achieved by layering the ingredients in one pot.

Cooking this entire French dish in one stove top pan is an easy way to cook, saving time and effort, and it is also incredibly delicious.
