How can it be that a Pork based meal served with a delicious creamy sauce is still healthy and low in calories. Of course if you want to lash out and serve this dish with rice, a pasta bake or mashed potato not only will it take this meal to another level it will increase the calorie count. That is entirely up to you and when feeding a family that is a very viable option and along with vegetables, is almost essential.

Baked Salmon with Pea, Broccoli and Mint Mash
This is an easy-peasy recipe.... ready to eat in less than 20 minutes, it's nutritious and low calorie. Oh and of course it's delicious or it wouldn't be on my website. I've played around with the flavours a bit, to bring it up to just how I like it.

Chicken and Apricot Tagine
It's hard to beat a Moroccan style tagine or casserole for flavour and nutritional benefits. This recipe is great for the busy home cook, as once the chicken and onions are browned on the stovetop, all the ingredients are tumbled into a large casserole dish and the meal cooks itself in the oven. It can be served in a beautiful tagine utensil if you own one, or straight from your casserole dish or cast iron utensil, with a light garnish of attractive green herbs.
