Lovely Lemons are in season, and anyone with a lemon tree where we live has them ripening profusely on the tree. I thought it was time to assemble my favourite lemon recipes together for you. Everyone of them is tried and true, and they are my go to at this time of year.
I thought of doing this post when we were talking to our 6 year old grandson yesterday online, together with his siblings, Evie aged 6 (twins) and Hugo aged 9, and Finn asked me if I would bake him a a Lemon Cake when I visit them in France. Of course I will I said. However, I was very surprised when I looked that I don't have a lemon cake on Happy Retirees Kitchen, although the lime cakes and desserts can generally be interchanged with lemon. I have just posted a delicious Lemon and Ricotta Cake Recipe which will be one of my favourite lemon cakes to bake, but as it really requires an electric mixer it may not be the one to try and bake overseas for Finn.
I am running out of time, to cook, photograph and write a special blog post for another simple one or two bowl lemon cake before I go on vacation, so I am thinking that Nagi's Lemon cake will also be a perfect one to make for him. Apparently he loves lemons. I am wondering if his father (our son) actually set him up to ask me, which I think is great anyway. Much easier and less messy than making lamingtons, which was also another request.
Here are some of my favourite lemon recipes:
A luscious orange and lemon syrup drizzled cake is perfect just served with a dollop of thick yoghurt. The sweet, sour, and refreshing flavour of fresh citrus fruits absolutely infuses this cake. These are the flavours of our Summer and will brighten up any Winter blues in the Northern Hemisphere as well. This cake is happiness on a plate. Why not bake it this weekend?
