Chicken and Apricot Tagine

 It's hard to beat a Moroccan style tagine or casserole for flavour and nutritional benefits. This recipe is great for the busy home cook, as once the chicken and onions are browned on the stovetop, all the ingredients are tumbled into a large casserole dish and the meal cooks itself in the oven. It can be served in a beautiful tagine utensil if you own one, or straight from your casserole dish or cast iron utensil, with a light garnish of attractive green herbs.

Edamame Bean and Tuna Salad

 

Edamame beans are a delicious addition to any salad. Full of fibre, and protein, they bring green freshness, crunch and are filling to eat. Edamame are young soybeans, harvested before they turn brown. I've made this salad a few times, always with a slight variation, however this is the basic recipe I use.

Bulgur or Bourghal Wheat Risotto with Chicken and Artichokes


It's easy to treat yourself to a fast, tasty and nutritious meal at the end of a busy day from food in your pantry. This is a quick post, to share with you a deceptively easy and delicious midweek meal. At the end of a busy day, if you have some left over chicken in the frig, a bottle of  preserved artichokes in your pantry, some bulgur wheat, and some white wine for the dish and the cook, voila you have the makings of a tasty and nutritious meal only 45 minutes max away.

Chocolate Eggplant Brownies, a Father's Day surprise package


Eggplant in Brownies, what next? When I saw this Brownie recipe including eggplant, and I had a large glossy black eggplant languishing in my fruit bowl which needed to be used,  my interest was piqued. This is the result. I seem to be including fruit and vegetables into the cakes, and desserts I make more and more these days, reducing calories, adding fibre, trying to stay healthy,  which also means I can still feel as if I'm indulging on a regular basis  without feeling guilty. Do you know what I mean? There is a plethora of Brownies recipes in circulation now, some including cooked beetroot, pears, or whatever your little heart desires really. I wanted to make Mr. HRK something nice for a Father's Day treat, as our children aren't in town, and Father's Day is a good excuse to make something special.

A Simple Curry in a Hurry: Chicken Tikka Masala with Minty Yoghurt Raita



Just when we think Winter has gone for another year, another cold snap surprises us, and believe me, in the Tropics a minimum of 4 degrees has us snuggling, reaching for comfort food, and dreaming of a curry. Curries though can be high calorie, and at my stage of life I need to watch the calories in between celebrations.  This curry is a low calorie one, taken and adapted from Dr. Michael Mosley's suite of low calorie recipes, apparently this one only serves up 427 calories, not too bad eh? If you are not watching your calorie intake though, just add lots of different condiments and plenty of rice, because my friends  this curry isn't lacking in flavour or appeal in anyway. We are growing fresh ginger, chillies, mint and silverbeet, perfect for this meal,  so I have harvested these fresh from my garden for this recipe. And if you make your own yoghurt, use it in this dish and the raita, it will be perfect.

Our turmeric crop is now harvested, dried and ground up into a gut friendly spice



Turmeric is a yellowy-orange spice used frequently in South Asian cooking, just in case you haven't heard. However, I doubt that very much as Turmeric has become very big news because of the health claims being made about it. The particular compound in turmeric that is now considered beneficial to us is curcumin, and evidence seems to be mounting that it is a powerful antioxidant and has anti-inflammatory properties. However, it's not that simple, as whilst it does our gut a lot of good, particularly the walls of our intestine, we are told that  the gut will only absorb the necessary amounts it needs if we add pepper at the same time, and perhaps a touch of chilli.

Chicken Miso Soup



After having visitors with us for a few days, a low calorie day is necessary today. Need I say anymore. However, a low calorie day for me still needs to be tasty, nutritious and not leaving me wanting for more. I have been hearing a lot of chatter recently about the success of the 5:2 diet, regarding weight loss. That is, eat what you want within the healthy range for 5 days, and fast on only 500 calories per day for 2 days, 500 calories for women, and 600 calories for men, and not on consecutive days.
