Gochujang Chicken and Seasonal Vegetable Traybake

I've been wanting to use my red tub of Gochujang Korean paste ever since we went shopping for it in Sydney at an Asian Supermarket a few weeks ago. I was so excited when I bought it. This is my first experience cooking with this fermented soybean and chili paste, and we love its unique umami flavours.

It's Zucchini Pickling day again

 

Zucchini pickle is a staple in my pantry, and is a great standby to serve with cheese and biscuits or to give to a friend as a foodie gift. Everyone seems to like it, and the recipe has been given out far and wide now amongst my friends and their friends.

Zucchini Pickles



What I love about this pickle is that the zucchini still maintains a delicate crunch and texture, and the pickling liquid is delicious married with oil to make a salad dressing.
